 Black & White Pepper is an incredibly popular spice Black pepper is one of the most versatile spices used in several kinds of savory cooking.

 

In order to keep their fragrance and flavor intact, they generally milled just before preparing dishes and added at the last minutes in the recipes

 

Clove (Karambunatti)  “ Queen of Spice ”

Clove is largely used as dried whole buds. Ground clove is used for curry mixtures and clove oil is used for flavoring foods and in pharmaceutical perfumery industry.
Cloves are used either whole or ground to provide flavor for both sweet and savory foods in pickling and the production of sauces and ketchups. In medicine it is valued as a carminative, aromatic and stimulant. It is being used in cigarette industry as a flavoring agent. Clove oil is used in perfumes, in dentistry and a clearing agent in microscopy.

Cardamom (Enasal)

Cardamom, the queen of spice, with a sweet mixture of aroma and flavour, is the third most expensive spice in the world spice market second only to vanilla.   . Three   types of Cardamom are found in Sri Lanka and they categorized based on the shape of the inflorescence.  

  • Malabar        – Inflorescence is prostrate.
  • Mysore         –  Inflorescence is vertical.
  • Vazhukka      –  Inflorescence is inclined.

Nutmeg and Mace    (Sadikka and Wasawasi)

Nutmeg is the seed of a type of evergreen tree (Myristica fragrans),  While mace is the reddish netlike covering surrounding the seed. Nutmeg and Mace are used as a flavouring for many sweet dishes

There are three main varieties of Criollo, Forastero, and Trinitario. Sri Lanka had the fame of having “Criollo” variety which produces fine and flavor cocoa but currently, most of the cocoa found in Sri Lanka are crosses of above three main varieties.
